Healthy Corn Salad

Do you remember the song, “Oh What a Beautiful Morning”? It’s a song about a bright golden haze on the meadow, corn being as high as an elephant’s eye, cattle standing like statues, but a little brown mav’rick winking her eye. It sings that the sounds of the earth are like music, the breeze is so busy it doesn’t miss a tree, and an ole weeping willow is laughing at me. Then it ends with: Oh what a beautiful morning, oh what a beautiful day, I’ve got a beautiful feeling; everything’s going my way. These lovely summer days are just like the lyrics of the song, and to celebrate the earth’s bounty, today we’re cooking with corn.

Healthy Corn Salad (Serves 4 as a side dish)

Ingredients:

  • 5 ears of corn (boiled or grilled)
  • 1 tomato, deseeded and diced
  • 1 red onion, chopped
  • 1 green capsicum, diced
  • 1 lime, juiced
  • 3 tbspns olive oil
  • Fresh coriander to taste
  • Salt and pepper

Method:
Remove kernels with paring knife and place in large bowl. Add tomato, onion, and green pepper. Toss to combine. Add lime juice and olive oil. Snip in coriander and season with salt and pepper. Serve.

Corn Muffins (Savoury and Sweet) (makes 12)

Basic Ingredients:

  • 2 cups self-raising flour
  • ½ cup soft butter
  • ½ tin of creamed corn or corn kernels (drained)
  • ½ tsp salt
  • 1 egg
  • 1 cup of milk

For the savoury version add:
¾ cup grated cheese

For the sweet version add:
2 tbspns warmed honey

Method:
Grease a muffin tin and set the oven to 200oC (or 180oC fan forced). Put the flour and salt into a large bowl. Rub the butter into the flour until the mixture resembles breadcrumbs.

If making the savoury version – add the cheese into the flour mix and stir through.

In a small bowl, pour in the milk and whisk the egg though the milk, add the creamed corn/corn kernels and mix thoroughly.

If making the sweet version – add the honey to the wet ingredients and mix well. Pour the wet ingredients into the dry ingredients and mix with a fork until just combined. Spoon mixture into the muffin tin, and place in oven. Bake for approximately 20-25 minutes.
