Take One Jar of Colways Apple Sauce Cake

Despite our commitment to keeping our pantries nicely stocked with tins and jars of food that are well within their use-by dates, it’s a sad fact that older pantry supplies are likely to get pushed further and further back into the recesses of the cupboard.

It was during a clean out of the pantry this week that we discovered a 370gm jar of Colway’s apple sauce (available at Aldi), with a fast-approaching expiration date. It was this jar that spurred the invention of this very tasty apple and walnut cake.

Dry Ingredients:
2½ cups of wholemeal self-raising flour
1 cup caster sugar
¾ cup raisins or sultanas
1 cup of roughly chopped walnuts
1 heaped tsp Gewϋrzhaus Apple Cake Spice (a blend of cinnamon, nutmeg, clove ginger, pepper, rosehip, rose petals and chamomile) 1 tsp icing sugar for decorating once cooked

Wet Ingredients:
¾ cup canola oil
1 jar of Colway Apple Sauce
2 eggs
½ cup milk

Method:
1. Preheat fan forced oven to 170˚C
2. Grease a 24cm round tin and line base with baking paper
3. In a large bowl, stir all the dry ingredients together
4. In a medium sized bowl, beat all the wet ingredients together so they are well-combined. We used an old-fashioned hand beater to do this
5. Pour the wet ingredients into the dry ingredients and mix with a wooden spoon until well combined
6. Pour mixture into prepared tin
7. Bake for approximately 60 minutes until the middle is firm to touch
8. Sieve the icing sugar on top before serving
