It might seem strange that you can have your cake while losing weight. Yes, it’s almost counterintuitive, but we’re here to tell you that this moist delicious chocolate cake, from Keto Kitchen, fits the bill.

Ingredients:

  • 170 grams of softened cream cheese (we left ours out on the bench for two hours).
  • 6 large eggs
  • 1 cup of stevia sweetener (or the amount of artificial sweetener that is equivalent to 1 cup of sugar)
  • 2 tsp vanilla extract
  • 2 cups ground almond meal
  • ¼ cup coconut flour
  • ¼ tsp salt
  • 2 tsp baking powder
  • 1/3 cup cocoa

If you want a chocolate icing: 1/3 cup Noshu 97% Sugar Free Dark Choc Baking Chips and 2 tbsp coconut oil.

Method:

1. Preheat the oven to 160o or 150o for a fan forced oven, and line a 23cm x 13cm loaf pan with baking paper.

2. In a blender (or mixer), place the cream cheese, eggs, sweetener, and vanilla. Blend from slow to high for about 40 seconds or until completely combined.

3. Take a large bowl and whisk together the coconut flour, almond flour, cocoa powder, salt, and baking powder.

4. Use a spatula to pour the wet ingredients into the almond flour mixture and stir well until no lumps remain.

5. Pour into the prepared loaf pan and bake for 1 hour to 1 hour 15 minutes, or until a toothpick comes out clean.

6. Set out to cool on a cooling rack for at least 20 minutes before removing from the pan.

7. For the icing, melt the Noshu 97% Sugar Free Dark Choc Baking Chips and coconut oil together, mix well, then drizzle on the top of the cake.
