This bright and colourful salad is perfect for Christmas. The recipe includes couscous, which is a coarse semolina made from wheat and available at local supermarkets.
• 1 cup dried couscous
• 1 green capsicum
• 1 medium carrot
• 2 cups of fresh cherries
• Handful of mint
• Juice of ½ lemon
• A little freshly ground black pepper
• 2 tsp olive oil
Cook couscous as indicated on the packet and allow to cool. Wash and seed capsicum and peel carrot. Cut vegetables into small cubes. Pit the cherries. Chop the mint finely.
In a salad bowl, mix lemon juice, olive oil, mint and black pepper. Add the vegetables, cherries and couscous and toss well. Toss again before serving.
